With a spare knife you are sure you can always gouge cane.
The knives are made of a special hardened steel with a fine structure to ensure a long lifetime and a smooth gouged surface. The lifetime is up to 400 hundred non pre-gouged blanks or up to 1.000 pre-gouged blanks. The shape of a knife results in an exact circular gouged shape. The diameter of this circular gouged shape is given by the “D” value of the knife.
A knife is very pointed and extends just a little bit out of the carriage. When a knife wears, and does not extend enough from the carriage anymore, it cannot cut cane although it is still sharp. We made the knife adjustable so you can restore the extension and use the knife to gouge even more pieces of cane. The cutting edge of a knife has a complex mathematical shape. Because of this a gouger knife cannot be sharpened in an economical way. If the knife is worn out you can change it yourself.
