With extra carriage sets you can make multiple types of gouged cane.
The carriage set holds the knife which defines the gouge diameter. With different carriage sets you can use the gouger for different types of oboe cane. It is easy to change a carriage set. The combination of cane diameter and knife diameter defines the difference in thickness between the middle and the sides of the gouged cane.
The knife of the carriage set is very pointed and extends just a little bit out of the carriage. When the knife wears, and does not extend enough from the carriage anymore, it cannot cut cane although it is still sharp. We made the knife adjustable so you can restore the extension and use the knife to gouge even more pieces of cane.
